Banoffee Pie!

FYI: My recipe is created for 1 person in a moderate realistic amount. If you are making for more people double the recipes. Yes it is a small portion as i made it just for myself with the purpose of not over eating and too much calories intake. 

So the regular banoffee pie is my favorite unhealthy dessert. Yesterday I was thinking about it and thought hmm there must be a way to create a similar one with healthy ingredients! 

 The final result, this is how it looks like (I was eating it in this pic of course :P)
Yummy, dont feel the same but great alternative for it!
It is time to say goodbye for regular pies!And say hello to the healthy alternative versions!!! Be convinced and motivated!

Banoffee Pie Health conscious version end result

Produce:

For the crust:
- 20g wholewheat organic pretzel 
- 20g almonds
- 1 tbsp flax seeds
- 1 tbsp coconut oil
-1/2 tbsp rice syrup (any syrup will do)
For the caramel toppings:
- 1 ripe of banana
- 5 soaked dates
- 30g of soaked cashew nuts
- 1 tbsp rice syrup (any syrup will do)

Process:
- First of all, you have to crush the crust which are pretzel, almonds, flax seeds, throw them all in the blender and crush it or do it manually by hand 
- Mix in liquid ingredients, coconut oil and syrup
- Mix it well together and press it in a bowl 
- If you have time I would suggest to put the crust into the fridge and let it tighten up together a bit, but if no time or really wanna have it then it will be fine as well :P


- Second, slice the banana and put them all on the crust 


- Third, make the caramel top!
- The very first thing you need to do before start making all this, you have to soak the cashew and dates up first, by adding regular water in a glass, put them in, and leave it soak for 4 hours++
- After soaking dates and cashew, throw the soaked ones into the blender or hand mixer and mix it well til it smooth!
- Add the 1tbsp rice syrup in
- Spread the caramel on top of the banana


- Leave the finished banoffee pie in the fridge for 2-3 hours or overnight (i left it overnight and have it as a snack the next afternoon)
