Cranberry Cookies - Vegan

Who does not love cookies? I loved and still do love cookies.

Well, I have been ill the whole weekend and havent gone out of the house the whole weekend. I, honestly, do not have much food to eat at home :P but i wanted to have some cookies. So i made some because they are easy and quick.

Here they are, the super Cranberry cookies

 Ingredients:
 - 1 cup of grounded oat
- 1/2 cup of shredded coconut
- 2 medium very ripe bananas
- 1 tsp baking soda
1 tsp baking powder
- 1/2 cup of dried cranberries
- 1/2 cup of raw almond nuts
- 1 tbsp of maple or rice or agave syrup
- a pinch of salt

Process:
- Pre heat the ovem at 170 degree
- Mash the banana in a bowl by using a spoon to crush it. (didnt use the mixer or blender here because i didnt want the banana to be too watery. You want to keep the thickness level)
- Put everything in the mashed-banana bowl, WITHOUT cranberry and almonds
- Mix it well and even, Then put cranberry and almonds in, mix a lil more for 4-5 times
- Use your hand to make a cookie shape, then put them on the baking sheet.
- Bake for 15 minutes

.................................................

Soft and warm.
This morning I have them as a morning snack with a coffee and a chill, relaxing, sunday music :)

Have a good sunny Sunday from Berlin :)

Super Nutty-Fruity Greek yogurt

I do love yogurt! Especially Greek yogurt. Do you know this Greek yogurt comes with so many benefits?? Here are some benefits
  1.  It has twice as much of protein than the usual yogurt
  2.  Low carb! Lower than the usual yogurt definitely.
  3.  Less lactose > easy to digest
  4.  Rich in versatility - because it is so thick and creamy. Many people start using it for baking, dipping, topping, and swapping with other non-sense food.
If you have read many posts on my blog, you will know that i do love peanut butter! Therefore, i mix goodness with my pleasure :P and it was a great combination, i must say!

I, simply, mix about 150-200 gram of Greek yogurt with 1 big table spoon of peanut butter in a blender. Blend it well together and it is ready!
To get rid of your hunger and stay full longer, I would add more of oat muesli, fresh fruits, and almond nuts on top as well. I had this one as dinner. Perfect for my tummy, not big and dont make me feel fat when i go to bed.

For this one, I used 150 gram of Greek yogurt. Put it into the blender and mix it with 1 tsp of tahini. Then in a bowl, I also put in some pomegranates and mix it. Sometime, I love itextra crunchy.

Greek yogurt with fruits is awesome! If you don't eat much fruits, this way can help you to eat more fruits. Fruits are great for your health and beauty! :)

Key-lime Kiwi pie (Raw & Vegan)

Woohoo finally I have blogger on my mobile devices!! This is gonna be so much easier to update more often!

So this is the target for today! Key-lime kiwi.  I love how the topping is so soft and smooth and it literally feels like some cake frost but of course without sugary taste. I love it that it also a bit sour while the nut is so nutty mad sweet in a way. This is vegan and raw!!
Yes raw-vegan can be yummy!

Ingredients
For the base
- 1 cup of raw almonds
- 1 tsp coconut oil
- 1 tbsp apple sauce
- 1/2 cup of dates

For the top layer or the green frost
- 1 ripe avocado
- 1 green kiwi
- 1 tsp lime juice (real fresh lime please)
- 1 tsp rice or any kind of syrup

Process:
- Start with the base, crush the almonds in the high speed blender, after finely blended then add the rest
- put in crust in your bowl or something you have that this pie can be made, not too big tho
- put the crust into the freezer while you are making the topping
-  put every ingredients for the green frost layer into a mixer then mix for 10 minutes, we want it finely smooth and soft looking
- take out the crust then put this topping over it
- decorate with goji berries ( optional)
- put it into the fridge overnight or few hours if you can't wait that long.

Doesnt the frost looks so nice and soft??!! Mmm yes it is nice and soft.

Hope you like it! As you know if it's too sour from lime juice or kiwi, you can also add some more syrup to cut it off. Or slowly put lime juice in a bit first and if you want it more sour the add more. Since not everyone like lime or sour taste for the dessert then it's totally adjustable to your preferences! Be creative since all these recipes can always be adapted ;) get the idea, know the process, them off you go, make your healthy desserts and meals!

Crunchy Peanut Butter-Oat Cookies (vegan & almost raw)

Once I have time, I have to update as many as I can. These recipes were pending to come on the blog

anyway! :P Sorry if I confuse you with many recipes all in once.

Last night, I made these cookies. I just went to buy creamy peanut butter from Denn’s then I thought

hmm what could I do with it?!?!? Then this idea came up, so I did it and they turned out yummy and

so creamy and nutty! Like how I love it :D

Produce:

- 3 big tbs creamy 100% peanut butter (organic would is an ideal)

- 1 tbs coconut oil

- 1 tbs rice syrup or any other syrup you have or honey

- 1 tbs of Chia seeds (optional)

- 1⁄2 cup of oats

Process:

- Put coconut oil and peanut butter in a slightly warm pan to melt it and mix it will together so

it is a little bit watery ***BUT If your peanut butter and coconut oil are already melted then you do not need this process***

- Mix all the produces together

- Put it on a plate or bowl and form it into square

- Leave in the fridge overnight (or 4 hours plus)

- In the morning before leaving your home, cut in into pieces

- Have them for your breakfast snacks to keep you full and energy boost!

Really nutter and crispy inside. They are almost raw (since I use some small amount heat to melt the

coconut oil and peanut butter) and they are certainly vegan!!!!

Enjoy :D

Yellow, Red, Purple, Dark Yellow Nana-Ice Cream

It has been very nice and sunny here in Berlin!
Apparently, summer does not wanna leave berlin just yet. However the weather forecast says it will start to be colder from next week, the real autumn! Urghhhhh
While it is still not that cold, slightly hot, I take the advantages by having my favorite nana-ice cream! This week I made yellow, red, and purple nana-ice cream!
The yellow nana-ice cream is typical with the ingredients which are

- 60ml of liquid, almond milk, milk, yogurt, coconut water, or simply normal water

- 1 ts maca powder (optional)
- 1 ts baobab
This is how it looks like

The Red nana-ice cream
- 1 frozen banana
- 1 handful raspberry
- 60-80 ml of coconut milk (beverage coconut milk, if it would be the one that use for cooking or cooking Asian curry will be too thick I suppose)

The purple nana-ice cream
- 1 frozen banan
- 1 handful blueberry
- 1 tbs Acai berry powder
- 60-80ml of coconut milk or any other kind of your preferred or available milk or simple water

The Dark Yellow Nana-ice cream
- 1 frozen banana
- 3 dried dates
- 60-80ml of coconut milk or any other kind of your preferred or available milk or simple water
- 1 tsp maca powder (optional)

 ............................................
I love crunchy toppings. Since week I bought quinoa puffs so I eat a lot of it! I love it. Healthy, crispy, gluten free. Then I topped with lots of almonds and some flax seeds and some fruits like pomegranates and peaches. Yummy, filling, healthy…. Ideal for weight loss dinner portion.

Cupcakes Raw&Vegan

Hey guys! I am back with gorgeous super yummy, filling, and healthy cupcakes!
they are so good, it hurts! You have to try!

These beauty cupcakes are vegan and raw!

Let's not waste no more time!
Like I told you, my recipes are reality actual size for 1 person and If you wish to make in a bigger amount, all you need is double the size. I mean how often you cook or bake something for a large group of people??? Let's us be realistic with the portion that we can make it for just 1 person and not wasting the ingredients!

And this is how they look like!
Healthy raw vegan cupcakes

Produce:
- 100g dates
- 1/2 cup of almonds or hazelnuts
- 2-3 tbsp spoons of granola
- 1/2 banana
- 100g low fat or greek yogurt
- 2 tbsp maca powder (optional)
- 2 tbsp rose hip powder (optional)
- Goji berries and dark chocolate chips for garnish

Now let us get started with the process, how do we do this?? Easy! Today I have images for step by step!

Process:

1. First thing you need to do it put the dates into the room-temperature clean water - leave them in the water for at least 4 hours

2. After you put dates into water, then start with the layers! I use these 4 cupcake block or you can simply use a deep bowl. Put granola into the blocks as the first layer

3. Put the nuts, yogurt, banana, maca, and rose hip powder into the blender, then blend until mixed.

Mix it until it looks like this. soft and smooth.
With rose hip powder, it makes the cupcake a tiny little sour, almost like cheesecake actually. If you don't pit rose hip powder in, it wont taste that sour. It is up to you. Rose Hip powder is optional, you do not need it. I added it just for some energy boost and antioxidant.

4. Put your finished mixture into the blocks or bowl or whatever you are using. then they will look like this! Soft and smooth and nutty and just so good! After that put the block into the freezer, freeze the cupcakes the whole time while waiting for the caramel frosting, which is the dates.

5. After 4 hours of leaving the dates in the water, we then put them into the blender and blend them until they are blended.
6. Put the date frosting mixture on top of your freeze-ed cupcakes
7. Garnish with some goji berries and dark chocolate chips

Then, there you go, raw and vegan cupcakes. Mine ones are very creamy almost like cheesecakes in the middle topped with sweet  date frosting... Kill the sweetness in some bites with the dark chocolate chips... Oh yeah <3

Spicy and sour Thai-style salad

Sa Sa Sa Saladddddd
I know this is not my typical dinner but since i feel like something spicy, i thought i had a salad for dinner.
(My usual dinner is smoothie)

First of all i wanna say that this is very f*#*@*king spicy!!

Ingredients:
- 50 gram  of champignons
- 20g Fresh salad
- Cucumber (As much as you want)
- 1-4 Chilli
- 1 tbsp lime juice
- 3/4 tbsp soy sauce

Process:
- Cook the sliced champignons in a pot with a little bit of water for 2-3 minutes. After this you can turn off the stove but we will continue cooking in the pot
- Put the fresh salad, cucumber, and chilli in then mix it together
- but lime juice and soy sauce in then mix it well

For the amount of the chilli, if you are not good with chili, suggest put just 1 chilli in. If you are very advance with spiciness, i suggest you put the whole 4 in but be prepared that this is really really really really SPICY! (Do not hate me afterwards, if this recipe will burn the hell out of you!)

Then it is ready to eat. Quick, Vegan, and almost raw (80% raw)!
I love quick dinner because everyday after work i always come home starving, which is not good i know.

The right weight loss diet is not about starve yourself and not eating at all, but it is about you know what you eat in the right amount and right ingredients and processes!
